What would cause this discoloration in both images? Some sort of artifact?

Yes, the strange colors are an #artifact, as is the fact that this is such a huge blob (it's a star, so it should be quite small).
It's certainly a #poorqualityimage, but the causes aren't ones we can necessarily work out just from looking at the image, bad focus? poor seeing (the air that night was highly unstable)? dust on the filter? dew inside the camera? software failure (in the photometric processing pipeline)? ...
