    The spiral arms of this galaxy appear to have elbows. That is the best way to describe it. Is this caused by dust clouds or just thicker and thinner sections of stars? Also in my initial classification I selected 2 spiral arms. I am starting to think that it is one giant arm that is broken up by sections with less stars or has parts hidden by dust.

    Yes, some galaxies have elbows, badly bent arms and broken arms. Not dust cloud, dust is usually only seen in edgeon views. I would go for 2 spiral arms myself.

    The blue looks like new stars that are forming. Hence it looks blue.
